Apple Spice Cookie with Pecans

Ingredients

Dry Ingredients

  • 3/4 Cups whole wheat pastry flour
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg

Wet Ingredients

  • 1 lg egg
  • 1/4 cup milk
  • 1/3 cup olive oil
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp vanilla

Additions

  • 1 cup apple chopped
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 375 degrees.
  • Mix the first 7dry ingredients together in a bowl.
  • In a second bowl, whisk egg with a fork. Add milk, vanilla, olive oil and mix.
  • Add sugars to egg mixture. Mix until well combined.
  • Add egg mixture to dry ingredients. Combine well.
  • Add chopped apple and pecans, and raisins to the dough.
  • Drop 2 inch spoonfuls onto parchment lined baking sheet. Leave space between cookies.
  • Bake for 10-12 minutes for a soft cake-like cookie.
  • Remove from oven and cool on a rack. Store with a single layer between parchment in a sealed containe in refrigerator. Freeze in airtight container up to 3 months.

Notes

This is a moist, cake-like cookie. 
Serving Size = 2 cookies.
