Broccoli, Leek ,Mushroom, and Brown Rice

Equipment

Ingredients

  • 2 cups brown rice Uncle Ben's Ready Rice
  • 1/2 cup broth chicken or vegetable
  • 1 cup broccoli chopped into 1-inch pieces
  • 1 cup mushrooms sliced
  • 1/2 cup leek one leek, finely sliced
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • salt and pepper to taste

Instructions

  • Chop broccoli, leek, and mushrooms. Set aside.
  • Heat 2 tablespoons olive oil in a frying pan.
  • Add broccoli and leek to frying pan. Cook for 2-3 minutes.
  • Stir in mushrooms and continue to cook. Add rice and stir.
  • Cook for 5 minutes or until broccoli is tender crisp.
  • Add balsamic vinegar and Worcestershire sauce.
  • Pour in broth and stir until absorbed. Serve warm.

Notes

Want to make a smaller recipe? Simply cut cooking amounts in half. Store leftovers in the refrigerator.
Serving size = 1/2 cup.
