Broccoli, Leek ,Mushroom, and Brown Rice

- 2 cups brown rice Uncle Ben's Ready Rice
- 1/2 cup broth chicken or vegetable
- 1 cup broccoli chopped into 1-inch pieces
- 1 cup mushrooms sliced
- 1/2 cup leek one leek, finely sliced
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp Worcestershire sauce
- salt and pepper to taste
Chop broccoli, leek, and mushrooms. Set aside.
Heat 2 tablespoons olive oil in a frying pan.
Add broccoli and leek to frying pan. Cook for 2-3 minutes.
Stir in mushrooms and continue to cook. Add rice and stir.
Cook for 5 minutes or until broccoli is tender crisp.
Add balsamic vinegar and Worcestershire sauce.
Pour in broth and stir until absorbed. Serve warm.
Want to make a smaller recipe? Simply cut cooking amounts in half. Store leftovers in the refrigerator.
