Savory Hot Potato Salad

Hot potato salad made with petitie potatoes, olive oil, onion, and green pepper.

Ingredients

  • 1 1/2 lb potatoes petite
  • 1/4 cup onion finely chopped
  • 1/4 cup green pepper finely chopped
  • 2 tbsp olive oil extra virgin
  • 2 tsp whole wheat flour white
  • 1 tbsp sugar
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup vinegar red wine
  • 1/3 cup water

Instructions

  • Boil potatos until fork tender. Remove from pot and cool.
  • Cut potatoes into 1/2 inch pieces.
  • Heat olive oil in a frying pan. Saute onion and green pepper until tender and remove from heat before browned.
  • Mix flour, sugar, salt, and pepper. Add vinegar and water.
  • Add flour mixture into onion and green peppers and heat until thickened.
  • Pour onion and green pepper sauce over potatoes and mix.
  • Serve warm. Flavor will improve over night.

Notes

This potato salad is also good as a cold salad.
