Easy Avocado Toast with Egg Recipe

- 1 avocado ripe
- 1 tbsp lemon juice juice of half lemon
- 2 tbsp tomato chopped, approximately 2 cherry tomatoes
- 2 tsp green onion chopped
- 1 tsp garlic minced
- 1/8 tsp smoked paprika
- 1 tbsp olive oil EVOO
- 1/8 tsp pepper
- pinch sea salt
- pinch basil dried
- 4 slices whole grain bread
- 4 lg eggs
Cut skin of avocado and remove peel. Chop ripen avocado into large chuncks. Sprinke with lemon juice. Add chopped tomato, green onion, minced garlic, smoked paprika, a pinch of sea salt and pepper. Use a fork or pastry blender to chop and mix ingredients into a chunky spread.
Heat olive oil in a frying pan over medium heat. Add egg and sprinkle with pepper and a pinch of chopped fresh or dried basil. Cook for 1-2 minutes until egg is white and solid. Turn heat to low and pull pan to the side. Gently turn egg and allow to cook for 1 minute. Gently turn egg again.
Toast bread. Spread with approximately 1 heaping tablespoon of avocado spread.
Gently transfer over-easy egg to top of toast. Serve warm.
