Turkey Sausage Breakfast Burrito

Healthy homemade turkey sausage gives added flavor to an egg and potato breakfast burrito. Perfect for breakfast or brunch.

Ingredients

Turkey Sausage

  • 16 ounces turkey ground
  • 1 tbsp olive oil extra virgin
  • 1 tsp ginger ground
  • 1 tsp sage ground
  • 1/4 tsp poultry seasoning
  • 1/2 tsp salt (optional)
  • 1/4 tsp cayenne pepper
  • 1 1/2 tsp black pepper ground

Burritos

  • 9 eggs whisked
  • 6 ounces potato shredded
  • 1 tbsp olive oil extra virgin
  • 3 green onions chopped, white and green portions
  • 1/2 tsp garlic minced
  • 2 tbsp green chilies
  • 1 cup Roma tomatoes chopped
  • 2 tbsp green pepper about 1/4 pepper
  • 2 tbsp bell pepper about 1/4 pepper
  • 1/2 cup cheese shredded
  • 8 tortillas flour or whole wheat

Sauce

  • 1/3 cup Greek yogurt low fat
  • 1/4 cup Picante sauce

Instructions

  • Preheat oven to 350°F. Wrap tortillas in aluminum foil, seal and heat while preparing burrito ingredients.

Turkey Sausage

  • Heat olive oil in a frying pan over medium-high heat. Add ground turkey and allow to cook for 2-3 minutes until it starts to brown. Mix spices and sprinkle evenly over turkey, Use spatula to break up turkey into bite sized pieces. Continue to stir and cook until meat is browned and no longer pink. Remove from pan and drain on paper towels.

Burrito Filling

  • Heat olive oil in a frying pan over medium heat. Chop green onion and shred potato. Add to hot pan. Stir and cook for 3-5 minutes. Add minced garlic and green chilies. Cook for 2-3 minutes. Chop tomato and peppers. Add to pan and cook for 2-3 minutes.
  • Whisk eggs and add to vegetables. Stir and cook until eggs are set. Mix in turkey. Remove from heat.
  • Add 2/3 cup burrito filling into tortilla. Sprinkle with 1 tablespoon cheese. Fold to close tortilla and add to baking dish. Continue to fill remaining 7 tortillas.
  • Mix Greek yogurt with Picante sauce. Drizzle sauce over burritos. Sprinkle with a tablespoon of cheese and green onion.
  • Place pan on the bottom rack of the over. Heat for 10 minutes.
