Spinach, Tomato, Ham and Cheese Quiche

- 4 eggs large
- 1 cup milk 2%
- 1/2 cup half and half
- 1/2 tsp pepper ground
- 1/4 tsp paprika
- 3.5 ounces ham unprocessed
- 1/3 cup onion finely chopped
- 1 tbsp olive oil extra virgin
- 1/2 cup tomato chopped
- 1 cup spinach fresh, chopped
- 1/2 cup Parmesan cheese shredded, 2 ounces
- 1/2 cup Gouda cheese shredded, 2 ounces
- 1 Pie crust
Pre-heat oven to 375°F. Add piece of parchment paper in bottom of crust. Add uncooked beans or pie weights to parchment. Place crust on bottom rack of oven and prebake for 15 minutes.
While crust is baking, chop ham, spinach, onion, and tomato.
Heat olive oil in a frying pan over medium high heat. Add olive oil and onion. Cook for 2-3 minutes until onion starts to brown. Add ham and cook for 3-4 minutes.
Remove quiche crust from the oven. Remove parchment paper and beans and discard.
Add ham and onion mixture to the bottom of crust. Next layer the chopped spinach, tomato, and cheeses.
In a mixing bowl whisk eggs, milk, half and half, pepper, and paprika.
Pour egg mixture over the quiche ingredients.
Place quiche on bottom rack of oven and bake for 45 minutes. Check quiche oneness by inserting a knife in middle of quiche. Quiche is done when the knife comes out clean.
