- 2 cups whole wheat pastry flour
- 2 teaspoons baking powder
- 1 lg egg
- 2 tsp brown sugar
- 1 cup milk
- 2 tbsp olive oil extra virgin, split
- 1 banana ripe
Add baking soda to flour and whisk to combine.
Mash banana with a fork until smooth and there are no large lumps.
Whisk egg and brown sugar. Add in milk and 1 tablesppon of olive oil. Mix until well combined.
Add mashed banana to egg mixture and mix well.
Stir egg mixture into the flour. Mix until well combined.
Add remaining olive oil to a frying pan. Heat over medium heat.
Use a 1/4 cup measuring cup to add batter to hot frying pan. Depending on the size of the pan, add 3 to 4 portions of batter.
Let batter cook for 4-5 minutes until you see the batter is covered with bubbles and the sides of the pancake are brown.
Turn the pancake and continue to cook until the bottom is brown and the pancake springs back when you lightly touch it with a finger.
