Ingredients

  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 lg egg
  • 2 tsp brown sugar
  • 1 cup milk
  • 2 tbsp olive oil extra virgin, split
  • 1 banana ripe

Instructions

  • Add baking soda to flour and whisk to combine.
  • Mash banana with a fork until smooth and there are no large lumps.
  • Whisk egg and brown sugar. Add in milk and 1 tablesppon of olive oil. Mix until well combined.
  • Add mashed banana to egg mixture and mix well.
  • Stir egg mixture into the flour. Mix until well combined.
  • Add remaining olive oil to a frying pan. Heat over medium heat.
  • Use a 1/4 cup measuring cup to add batter to hot frying pan. Depending on the size of the pan, add 3 to 4 portions of batter.
  • Let batter cook for 4-5 minutes until you see the batter is covered with bubbles and the sides of the pancake are brown.
  • Turn the pancake and continue to cook until the bottom is brown and the pancake springs back when you lightly touch it with a finger.
