Ingredients

  • 4 cups peaches sliced thinnly
  • 1 tbsp lemon juice
  • 2 tbsp sugar

Crumb Topping

  • 1/2 cup whole wheat pastry flour 1 tablespon reserved for peaches
  • 1/4 cup rolled oats
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 3 tbsp olive oil
  • 3 cups Low-Fat Greek yogurt

Instructions

  • Preheat the oven to 350°F. Spary baking dish with cooking spray. Set aside.
  • Peel and thinly slice peaches into a glass bowl. Sprinkle lemon juice over peaches. Lightly toss to coat. Mix 1 tablespoon of sugar and 1 tablespoon of flour and sprinkle over peaches. Set aside.
  • Add peaches to the baking dish with a slotted spoon. Drain the peaches before adding to the pan.
  • For the crumb topping: Add flour, brown sugar, oats, cinnamon, and nutmeg to a bowl. Stir to mix well.
  • Drizzle olive oil over flour mixture. Use a pastry blender or fork to work the flour mixture into crumbs. Continue to blend until the mixture will hold together in your hand.
  • Sprinkle crumb topping evenly over peaches.
  • Bake on the lower rack of the oven for 30 minutes until the crumb topping starts to brown and the peaches are bubbling.
  • Serve over Greek yogurt.

Notes

Serving Size = 1/2 cup Greek yogurt and 1/3 cup Peach Crisp.
