- 3 cups tomato chopped into 1 inch cubes
- 2 cups cucumber English, sliced into halves
- 1/2 cup onion finely chopped
Dressing
- 3 tbsp olive oil extra virgin
- 2 tbsp white wine vinegar
- 1 tbsp basil fresh, finely chopped
- 1/4 tsp salt
- 1/8 tsp pepper
Dressing
Add vinegar, basil, salt, and pepper to a bowl. Whisk to combine.
Slowly drizzle in olive oil while whisking.
Drizzle dressing over tomato mixture. Toss to coat.
Refrigerate to chill. Serve with a slotted spoon.
