Simple Tomato Cucumber Salad

Garden fresh tomatoes, English cucumbers, and onion dressed in a basil viniagarette. Perfect summer side dish.

Ingredients

  • 3 cups tomato chopped into 1 inch cubes
  • 2 cups cucumber English, sliced into halves
  • 1/2 cup onion finely chopped

Dressing

  • 3 tbsp olive oil extra virgin
  • 2 tbsp white wine vinegar
  • 1 tbsp basil fresh, finely chopped
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  • Chop tomoto, cucumber, and onion. Add to a large bowl and set aside

Dressing

  • Add vinegar, basil, salt, and pepper to a bowl. Whisk to combine.
  • Slowly drizzle in olive oil while whisking.
  • Drizzle dressing over tomato mixture. Toss to coat.
  • Refrigerate to chill. Serve with a slotted spoon.

Serving size = 1/2 cup
